The menu features starters and main courses marked with a crown icon, signalling their Champagne pairing. The dishes, crafted with premium ingredients, cater to diverse palates, including vegan options. For example, poached scallops with green melon and lemon gel pair with Moët & Chandon Grand Vintage 2016.
Vegan silken tofu with poached asparagus and cashew cream complements Moët & Chandon Brut Impérial, highlighting umami and creamy textures. Main courses like roasted duck with raz el hanout-spiced couscous and seared Chilean seabass with artichoke puree further showcase the menu’s sophistication, paired with Rosé Impérial and Brut Impérial, respectively.
Collaboration
The menu’s development involved extensive collaboration between Bardet, a Michelin-starred chef, and Bekris, a culinary innovator with global experience.
Working between France and Dubai, they addressed challenges like altitude’s impact on taste, large-scale meal production, and pre-preparation for Emirates’ (EK) 77 million annual meals. The chefs ensured dishes maintained restaurant-quality flavours while being practical for in-flight service, enabling cabin crew to plate them seamlessly for Business Class passengers.
Emirates’ (EK) partnership with Moët Hennessy, spanning 33 years, underpins this initiative. The airline, which purchases more Champagne than any other globally, offers exclusive varieties like Moët & Chandon Grand Vintage 2016 and Rosé Impérial.
